      Preparation Direction: Quick Soak (Preferred): 1. Rinse and sort beans. In large saucepan or Dutch oven combine 10 cups water and 1 pound dry beans. 2. Bring to a rolling boil; boil 2 minutes. Remove from heat; cover and let stand 1 hour. 3. Drain and rinse. Continue with cooking directions. Overnight Soak: 1. Rinse and sort beans. In large saucepan or Dutch oven, combine 6-8 cups cold water and 1 pound dry beans. 2. Cover and let stand overnight (at least 6-8 hours). 3. Drain and rinse. Continue with cooking directions. Cooking Directions: 1. In large saucepan or Dutch oven over medium heat, combine 6 cups water and 1 pound soaked beans; bring to a simmer. 2. Cover and simmer 1 to 1-1/2 hours or until tender. 3. Remove from heat; drain well. Beans are a natural agricultural product. Despite use of modern cleaning equipment, it is not always possible to remove all foreign material. Sort and rinse beans before cooking.
